Vegan Recipe Chocolate Filled Almond Cookies

 Did you know that you can make a really good vegan chocolate sauce using just three ingredients? You can even use this same method to make a thicker, ganache like chocolate.

All it takes is water, cocoa powder and sugar substitute. 

You can use this method to make hot cocoa, pie fillings, garnishes for cookies and more. 

I made some simple vegan thumbprint almond cookies and then topped them with the ganache. 

It sounds like it should be difficult, but it's not. 


Ingredients for the Vegan Chocolate Ganache
1/3 cup water
1/3 cup sucralose
Cocoa powder

Instructions to make the Ganache
In a small sauce pot heat the water and the sucralose over medium low heat. Slowly whisk in the cocoa powder in 1 tbl increments until the desired thickness is achieved. Keep in mind it will thicken a little more upon cooling. 


Ingredients for the Vegan Almond Cookies
1/2 cup ground almonds
1 can chick peas, thoroughly rinsed
1/2 cup old fashioned oats
1/2 cup sucralose
1 tbl canola oil
2 tbls almond extract
2 tbls almond milk
1/2 tsp salt


Instructions for the Almond Cookies
Pre-grind the almonds in a spice grinder. Then add all the dry ingredients to a food processor, including the chick peas, and pulse until chunky. Add in the liquids and process until a thick, crumbly cookie dough texture is formed. You should be able to shape it, but it shouldn't be too wet. If your mixture is still too dry you can add more almond milk in 1 tbl increments. Keep in mind, the dough should be as dry as possible while still holding together nicely and being moldable. 

Use a small scoop to create 2 inch mounds on a greased sheet pan. Then use a spoon to flatten into cookie shapes. Use your fingers to create a small dent in the center of each cookie. 

Bake the cookies at 350 F for 15 minutes. You can add 2-4 more minutes for a crunchier cookie. 

When the cookies are done thoroughly cool before proceeding. 

Add a generous dollop of your chocolate ganache mixture into each dent in the centers of the cookies. 

Cool in the fridge for a few hours if needed to further firm up the chocolate.
